Chris Bianco's wood-fired pizzeria helped put Phoenix on the national food map, and the original location in Heritage Square downtown is still the one to seek out. Bianco is one of the most celebrated pizza makers in the country, and the care shows in every pie.
The menu is short and deliberate, built around a handful of pizzas, a few antipasti and simple salads. The Rosa — with red onion, rosemary, Parmesan and Arizona pistachios — is the one regulars talk about, but you won't go wrong with the Margherita either. Come hungry and expect a wait; it's part of the experience.
It's a downtown institution and an easy add-on to a day exploring the museums or Roosevelt Row. If the wait looks long, put your name in and grab a drink nearby — it's worth it.
